Cinnamon Bars

A quick and easy biscuit recipe, perfect for taking to a baby shower picnic in the park. Crumbly and soft, nutty & cinnamon-y. Yum!

Even the ingredient list is sparse. I took process photos, but honestly, there were hardly any steps! Rub margarine into the dry ingredients, then press into the tin.

I sprinkled flaked almonds & leftover cinnamon on top, and baked. So easy!!

Cut up, and ready for a weekend picnic.

Cinnamon Bars

butter or oil for greasing

175g plain flour

1tsp ground cinnamon

50g caster sugar

100g butter

25g flaked almonds

Grease a 30cm x 20cm swiss roll tin. Set the oven to 180C / gas 4.

Sift the flour and 1/2 tsp cinnamon into a mixing bowl and add the caster sugar. Rub in the butter until the mixture resembles firm breadcrumbs and work into a soft dough. Press the mixture into the prepared tin. Flatten and level the surface, then sprinkle with the flaked almonds and remaining cinnamon.

Bake for 15-20 minutes until golden brown. Cut into bars whilst still warm.
