Melting Moments

Going to a friends BBQ, I wanted to take along something, so I made these Melting Moments as the recipe looked quick and easy. Of course, immediately after making these easy biscuits I attempted to make Florentines which weren't quite as easy.

This is seriously one of the shortest recipes ever, so I took barely any photos. First of creamed margarine & sugar (can I just say how much easier it is to cream margarine than butter!), adding a little egg, then adding the flour.

The hardest part was rolling the wet mixture into balls. Luckily I'd had a quick look online before starting and saw a tip to wet your hands first. With very wet hands I made 12 balls (I should have made them smaller & made more.)

20 minutes in an oven and they had spread a little and cooked through. They were only slightly sweet so were very moreish - easy to eat. The oats added a slight crispness and generally they went down very well at the BBQ I took them to later that day.



Melting Moments

butter/oil for greasing

100g margarine

75g caster sugar

2 tbsp beaten egg

125g self-raising flour

pinch of salt

rolled oats for coating

4-5 glace cherries, quartered


Grease two baking sheets. Set the oven to 180C/gas 4.


In a mixing bowl, cream the margarine and sugar until pale and fluffy. Add the egg with a little flour and beat again. Stir in the remaining flour with the salt, mix well, then shape the mixture into 16-20 balls with the hands. It helps to have wet hands.


Place the rolled oats on a sheet of greaseproof paper and toss the balls in them to coat them evenly all over. Space the balls on the prepared baking sheets. Place a small piece of glace cherry in the centre of each.


bake for about 20 minutes until pale golden brown. Leave to stand for a few minutes on the baking sheets, then cool on a wire rack.
